½ cup

1 cup

Egg &ndash large

Orange juice

1/3 cup

Vanilla extract

1 tsp

All-purpose flour

3 cups

Baking powder

2 tsp

½ tsp

Egg white &ndash beaten

Cinnamon-sugar mixture

Jams as per your preference &ndash strawberry, grape, blueberry, etc.

Chocolate chips

1.     Preheat oven to 350 degrees.

2.     Using an electric mixer &ndash beat the margarine until it&rsquos creamy (try to let it come to room temperature ahead of time). Slowly add the sugar and continue beating.

3.     Once the sugar and margarine are well mixed, add the egg, orange juice and vanilla extract.

4.     In a separate bowl &ndash combine the flour, baking powder and salt. Slowly add this to the margarine mixture until a smooth dough forms.

5.     Lay out plastic wrap and transfer the dough onto it. Flatten the dough until it is a round disk. Cover it completely with the plastic wrap and refrigerate for at least 15 minutes. (Note &ndash this dough can be made and refrigerated for up to 2 days if you prefer to make it ahead of time).

6.     Prepare a surface with some flour and roll out the dough onto this surface. Use a glass or a round cookie cutter to create circles.

7.     Fill each circle with the filling of your choosing &ndash flavored jam or chocolate chips. I like to do one batch of each flavor of jam and one batch of chocolate chips.

8.     To create the triangle shape &ndash fold the 2 sides and pinch the top and each of the bottom corners. Make sure you pinch it tight so it does not open while baking.

9.     Place the hamantaschen onto a greased cookie sheet. Brush each of them with the beaten egg white and then sprinkle with the cinnamon-sugar mixture.

10.     Bake for about 20-30 minutes until they are a light golden color.

Enjoy and Chag Purim Sameach!
