Chocolate bars or chocolate chips (can be dairy or non-dairy)

16 oz


Creamy or chunky peanut butter (I prefer creamy)

½ cup


Powdered sugar

¼ cup


Coconut oil (can use regular oil)

¼ cup




1.     Melt the chocolate either in a double boiler on the stove top or in the microwave. If you don&rsquot have a double boiler you can boil a small amount of water in a regular pot and then place a glass bowl so it&rsquos sitting on top. Place the chocolate inside and it will slowly melt.

If using a microwave &ndash put the chocolate in for 45 seconds at a time and then take it out and stir and put back until fully melted.

2.     Line a muffin pan with muffin cups and spoon 1 tablespoon of melted chocolate into the bottom of each muffin cup. Bang the pan on the counter to make sure the chocolate is even and then place the pan in the freezer for 10 minutes to set the chocolate.

3.     Mix together the peanut butter, powdered sugar and oil until it&rsquos a creamy consistency but it should not be too liquid.

4.     Remove the pan from the freezer and spoon 1 tablespoon of the peanut mixture onto the semi-frozen chocolate. Once complete, return to freezer for another 10 minutes to set the peanut butter.

5.     Remove the pan from the freezer and top with another 1 tablespoon of melted chocolate and then return to the freezer until ready to eat (at least 1 more hour).

6.     Best is to let them &ldquodefrost&rdquo outside of the freezer for about 10 minutes before serving.
