Ingredients

Quantity

Oat flour (blended oats)

1 ½ cups

Vanilla extract

2 tsp

Egg &ndash large

1

Dark brown sugar

4 tbsp

Coconut oil

½ cup

Baking soda

1 tsp

Cinnamon

1 tsp

Salt

Pinch

Dark chocolate chips

½ cup

 

1.     Take old fashioned oats or quick oats and blend them in a food processor or blender until they resemble a powder-like flour consistency. You should have 1 ½ cups AFTER blending.

2.     In a separate bowl, mix together the vanilla, egg and brown sugar.

3.     Melt the coconut oil and let it cool a bit before adding to the egg mixture.

4.     Stir the oat flour, baking soda, cinnamon and salt into the egg mixture until combined.

5.     Fold in the chocolate chips.

6.     Chill the dough for at least 1 hour. Preheat the oven to 350.

7.     Use an ice cream scoop to scoop out the balls of dough. Make sure to pack the dough tightly into the scoop so that it doesnt crumble.

8.     Place the dough onto a lined cookie sheet and feel free to add a few more chocolate chips on top.

9.     Bake for 8-10 minutes and allow to cool on the cookie sheet for an extra 2 minutes.
