Ingredients

Quantity

Onions - chopped

Garlic cloves - diced (or use the frozen cubes)

Paprika

 

To taste

Pepper

 

To taste

Cumin

½ tsp

Carrots - chopped

2

Zucchini - chopped

2

Green lentils (dry)

2 cups

Water

6-8 cups

Salt

To taste

 

  1. Sauté onions and garlic in olive oil over medium heat until light brown.
  2. Add the paprika, pepper and cumin and saute for a few more minutes.
  3. Add in the chopped vegetables and saute until the vegetables are coated in the spices.
  4. Pour in the lentils and mix.
  5. Add the water and turn the heat up until it reaches a boil.
  6. Lower the heat and cook until the lentils are soft (about 45 minutes). Then add salt.
  7. Note: you may need to add more water as it cooks as the lentils tend to soak up the water. As you add water just make sure to add more salt as needed.
