Light, airy, simple and everyone loves them!

 

Ingredients

Quantity

Egg whites, room temperature

4

Salt

1/4 tsp

Cream of Tartar (can substitute lemon juice or white vinegar)

1/4 tsp

Vanilla extract

1/4 tsp

Sugar

1 cup

Semisweet chocolate chips (optional)

12 oz

 

1.     Preheat oven to 225 degrees Fahrenheit.

2.     Using an electric mixer beat the egg whites, salt, cream of tartar (or substitute) and vanilla until you get soft peaks. This means that when you stop beating and you lift the beater a peak will form but it will start to fold.

3.     Continue beating while very gradually adding the sugar, 1 tablespoon at a time. Beat until all the sugar has been incorporated. The mixture will now become glossy and the peaks will be stiff.

4.     If you are adding the chocolate chips - very gently fold them into the meringue mixture using a spatula.

5.     Note: at this stage you can feel free to add a few drops of food coloring to the mixture to make a colorful batch as well!

6.     Using a teaspoon, drop the meringues onto your lined baking sheet. They will bake for about 1.5 hours and will be slightly golden brown when they are done.
