Baked Eggplant

 

A delicious and different way to cook eggplant!

Ingredients

Quantity

Eggplant, sliced into ½ inch thick rounds

1

Tomatoes, sliced

3

Olive oil

1 Tbsp

Oregano

1 Tsp

Grated parmesan

1/3 cup

Salt and pepper

To taste

 

 

1.     Preheat oven to 400 degrees. Spray a pan with nonstick spray.

2.     Place the eggplant on the tray. Place the tomato slices on top of each eggplant slice.

3.     Drizzle olive oil on top of the eggplant and tomatoes and season with the oregano, salt and pepper.

4.     Sprinkle the parmesan cheese on top of everything.

5.     Bake in the oven until the cheese starts to brown, approximately 30 minutes.

6.     Switch the oven to broiler heat and bake for another 5 minutes.
